We buy our salmon from salmon farms who operate to the highest welfare standards, ensuring that they meet the stringent requirements laid down by the RSPCA Freedom Food standards.
All farms minimise their environmental impact to will ensure that they produce the finest quality Scottish Salmon in harmony with the natural environment.
Whole salmon are processed within two days of harvest, to ensure maximum freshness and quality.
Our salmon are fed a diet of high quality fish meal and fish oils derived from wild caught small fish, such as capelin, which they would eat in the wild. The feed contains carotenoid pigments, of which there are 600 naturally occurring pigments, resulting in the pink flesh colour, and also have an essential nutrient effect on the health and well-being of the salmon. Feeds are free from all genetically modified ingredients.
Smoked Salmon
Our peat smoked salmon is made from only the finest Scottish salmon. It is dry salted, then smoked for three days over peat and oakwood. The taste and texture are superb!
We supply many top hotels and restaurants as their chefs consider this product to be the best. We also produce a delicious hot smoked salmon which is roasted during the smoking process, providing our customers with a succulent, beautifully flavoured product.
We only hand-process our fresh and smoked salmon as we have found this to be the best method of producing highest yield with most consistent quality both in the whole fish and in the range of fillets we offer.
