A History of John Vallance
John Vallance are a family business going back four generations, with over one hundred years experience in the fish industry.
Historically we were based in the old Glasgow fish market in the city centre on the banks of the Clyde itself. Times have changed and we now find ourselves in an all purpose fish, fruit and vegetable market area adjacent to the M8 Motorway to the north east of the city. Lorries arrive throughout the night and into the morning to discharge their various loads of a huge variety of fish, so work starts at 02:45am every morning in order to sort and grade the fish according to each of our customer’s specific requirements.
Our customer base has also changed over the years. Whereas the traditional fishmonger role used to predominate in our business, we now find ourselves supplying an increasingly varied clientele throughout Scotland and beyond.
We source the majority of our fresh fish from the North-east of Scotland with haddock and whiting being the traditional favourites, although changing consumer tastes have seen an increase in demand for prime fish like halibut, turbot ,monkfish, sea bass and lemon sole to name but a few.
Smoked fish such as salmon, haddock, smokies and kippers are also stocked and we use only the finest fish smokers in Scotland to ensure you get a top quality product.
Improved international transport links mean you now have more choice of which fish you want to buy and from where it is sourced, and we are now able to offer fresh fish products from all over the world. King prawns and tiger prawns from the Far East; tuna and swordfish from the Indian Ocean; red snapper and tilapia from the Caribbean.
We can deliver fresh fish and seafood from the sea to you daily. Our highly skilled staff can prepare our fish to your specific requirements.
